The acorns are the characteristic fruit of the holm oaks, the most prevalent trees in the Mediterranean pasture. This fruit is known for its high percentage of unsaturated fatty acids.
The fat of the acorn-fed pig has more than 55% oleic acid (monounsaturated). Only olive oil has a higher oleic acid content. This is why the 100% Iberian acorn-fed pig is known as the "olive tree with legs", due to its benefits similar to those provided by olive oil.
