Afuega'l Pitu Roxu cheese is a cheese made exclusively from cow's milk pasteurized through a natural lactic coagulation process. It is a cheese with a natural rind, the consistency of which varies depending on the degree of ripeness and the addition of paprika. Its colour is orange red. The taste is slightly acidic, creamy and quite dry, strong and spicy due to the addition of paprika. It is pasty and astringent as it passes through the throat. Its aroma is soft, characteristic and increases with ripening.
One of the oldest and most widespread Asturian cheeses, both in terms of its considerable production and for its wide manufacturing area. Its name comes from the "bable" Asturian dialect and means 'choking cake', reflecting its unusual texture as it hits the taster's palate and pharynx. It is usually tasted as a "tapa" or dessert, generally accompanied by bread.
