Albacore Tuna in Vinegarette

The “Thunnus alalunga", with white meat and having a soft texture, native to the Cantabrian sea, is referred to both as NORTHERN CANTABRIAN WHITE TUNA or simply CANTABRIAN WHITE TUNA. It is the king of preserved fish and within the Albo family it enjoys a splendid representation in its different forms and presentations.
