Inside: firm and compact, ivory in colour, with irregular granular holes/eyes.
Texture Firm, not very elastic. Medium to low friability and solubility. Slight granularity.
Flavour Balanced flavour with light and pleasant acidic hints combined with sweet aroma notes thanks to the rosemary leaves.
Aroma Balsamic memories due to the leaves of rosemary.
Pairing Montilla Moriles or to enjoy a different pairing, white wines such as Albariño or Ribeiro.
Consumption The cheese should be left to warm to a temperature of nearly 18º C before serving, as it is best eaten at this temperature.

Pasteurized sheep´s milk, salt, rennet, cheese cultures, calcium chloride and lysozyme (from eggs). In rind: E-235 (preservative) and natural rosemary.
