These wonderful peppers that originate from the town of Padrón in Galicia are planted by a local farmer who is a native Spaniard in our very own Ventura county. Some are hot, some are not but all are delicious!

How to make good Pimientos del Padrón?
· Wash the peppers under the tap and drain well to remove excess water.Heat two or three tablespoons of olive oil in a frying pan. Add the peppers and sauté over medium heat, turning occasionally, until the peppers are deflated and golden brown, about 10 minutes. When they are ready, transfer them to a serving platter and add coarse salt or salt flakes on top.
· Alone as a tapa, in "montaditos" by toasting a slice of bread with chorizo, bacon, or whatever you like or on a plate with fish or meat. Delicious!
