It is a fatty cheese, cylindrical and Planar faces, with a height of between 7 and 15 cm. and intense and penetrating smell. Its bark, gray with greenish-yellow zones, is soft, creamy and thin, giving way to a compact, also creamy body and eyes. Ivory white streaks of blue-green. Salting is done with dry salt and the minimum maturation of this cheese is two months since the preparation of the curd. You can reach consumers wrapped in Maple leaves.
