According to history, in the early 19th century, the French invasion left the city of Cádiz under siege for an extended period, forcing its inhabitants to use almonds stored in customs warehouses, originally destined for overseas colonies. Ground, kneaded, and baked, the almonds served as a substitute for "bread" to accompany meals. This culinary treasure has been preserved over the years, becoming a part of the region's traditional gastronomy to this day.
This is the origin of this iconic sweet from Cádiz, which later became sweeter and richer with fillings of egg yolk and sweet potato, resulting in the current "marzipan from Cádiz," better known as "Pan de Cádiz."/p>
