Prepare the ingredients:
Drain the anchovies and the pickled chili peppers. Cut the chili peppers into pieces about 2-3 cm long.
Assemble the gildas:
Skewer a green olive onto the wooden skewer. Add a piece of pickled chili pepper. Fold an anchovy and add it to the skewer.
Repeat:
Repeat the process until you have the desired number of gildas.
Serve:
On a tray, prepare a 'bed' of chips and place the gildas on top. They can be enjoyed with a good wine or a cold beer.
