When the Monastrell meets the Mother Rock
At the foothills of the Dolomite mountain, we find the Monastrell in the most stony soil, where the roots only deep 60 cms until touching the Mother Rock. In this wine, we look for the originality of this Monastrell meeting the Mother Rock (dolomia-calcarous). In order to respect this personality, we decided to elaborate the wine as the Friars (los Frailes) did at the Estate, limiting to minimum the intervention at the winery and using the same concrete deposits and anfors as the friars used a long time ago.
Soils
Single vineyard called “Dolomitas”. 700 meters over sea level. Soil located at the foothills of the Dolomite mountain, very stony (due to the Dolomite erosion), rich in magnesium and very close to the mother rock (the tap calcareous). There is not deepness in the soil and the roots are developed in the mother rock, providing a minerality, freshness and finesse to this wine. Bush vines planted in 1980 in dry agriculture.
Vinification
The harvest is manual. The work at the winery is limited to a minimum: wild yeasts, light battonages, minimum amount of sulphites and light filtration. Alcoholic and malolactic fermentation in old concrete deposits from the c. XVIII where the friars used to elaborate wine. Aging the wine for 10 months in old concrete deposits and anfors.
