1 pumpkin (approximately 500 g), peeled and cut into small pieces

 Chorizo Bilbao

 1 onion, chopped

2 cloves of garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

Fresh chopped parsley (optional, for garnish)

1 In a large skillet, heat the olive oil over medium heat.

2 Add the sliced chorizo to the skillet and cook until it releases some fat and browns slightly.

3 Add the chopped onion and minced garlic to the skillet and sauté until golden and fragrant.

4 Incorporate the pumpkin pieces into the skillet. Cook over medium-high heat, stirring occasionally, until the pumpkin is tender and golden on all sides.

5 Season with salt and pepper to taste. Adjust the amount of salt according to your preferences. If desired, garnish with fresh chopped parsley before serving.
