1 Wash the potatoes thoroughly, as they will be eaten with the skin. Cut them in half lengthwise and make diagonal cuts to allow the flavors to penetrate.
2 Cut the garlic cloves in half and rub them over the potatoes. Generously sprinkle Pimentón de la Vera over the potatoes, season with salt, and drizzle with olive oil.
3 Place the potatoes in the oven at 200 °C (390 °F) without fan for about 45 minutes. Check occasionally by piercing with a fork.
4 Once baked, optionally add a little more Pimentón de la Vera and an extra drizzle of olive oil. Serve hot as a side dish for meats, fish, or enjoy on their own.
