1 Place the goat cheese log on a cutting board and remove the rind. If the cheese is cold, this step will be easier.
2 Crumble the rind-free goat cheese in a large bowl with a fork, then add the cream cheese and mix well.
3 Using your hands, form balls of the desired size and place them on a plate. Make a small hole in each with a chopstick. If too soft, refrigerate for a few minutes.
4 Fill each bonbon with a little caramelized tomato, then coat them in diced almonds.
5 Serve with fresh herbs, pomegranate seeds, and cranberries for a festive holiday touch.
